Hot smoking (or cooking) is possible in the heat treatment mode.
The equipment operates in the following modes:
1) Heat chamber for heat treatment and smoking of products:
The equipment operates as a standard heat treatment and smoking chamber or as a cooking chamber allowing for free steam cooking.
In this mode, the predrying of product surface is performed as in a standard heat chamber – with a combination of air blast and high spatial temperature.
Smoking is induced by hot smoke.
2) Heat chamber for smoking of untreated products (hybrid):
In this mode, the operating principle is different from that in standard heat chamber, because the product surface is predried not due to heat but to moist condensation in heat exchanger. It means that there is no risk of overheating the product or the following overdrying, cracking or deformation of the surface.
For meat smoking, the process starts with predrying of the product surface.
This prevents uneven smoking, formation of droplets and stains on the surface and sticking of products of combustion or tar products of wood chips pyrolysis to the surface of products with subsequent darkening (lightening).
The product is predried in a chamber with controlled temperature, humidity and air blast.
The air blast circulating near the surface of the product captures steam and is sucked in by a climatic device.
The climatic device condensates steam on the stainless steel plates of the heat exchanger.
The air is then processed to the set temperature and humidity and returns to the heat chamber.
After the predrying, the product is smoked with the steam generated by the pyrolysis of wood chips in the smoke unit.
The automated control system administrates the whole cycle in the chamber.
The sensors measure the temperature and humidity of the air in the chamber.
Based on the required values of temperature and humidity specified in the program, adjustable heating, cooling and moisture output is controlled.
Thorough washing of the equipment is ensured.
The CHAMBER can have any type of power supply (electricity, natural or liquefied gas, liquid or solid fuel boiler).
The control system can be supplied as a separate unit or be integrated with the CHAMBER.
The CHAMBER can be produced according to the parameters set by the buyer.
Monitoring and control of the operation of the CHAMBER can be carried out remotely from PC or smartphone.
